Mediterranean Pasta…

  • Measurements are for 1 person
  • Ingredients
    • 1 Chicken Breast or 3 Meatballs
    • ¼  cup Orzo
    • 2 Medium Bell Peppers (Red & Yellow)
    • 1 Zucchini
    • ½ Medium Onion
    • Greek Salad Dressing
    • Olive Oil
    • Salt Pepper
    • Greek Seasoning
    • Lemon Pepper
    • Optional: 3 Cherry Tomatoes & a handful of baby spinach
  • Preparation
    • Preheat the oven to 350 degrees
    • Chop the chicken breast into bite size pieces
      • After rubbing down the chicken with olive oil season it with Greek seasoning, salt, pepper, and lemon pepper
    • I use preseasoned and premade meatballs from Publix
    • Slice the bell peppers &zucchini, while chopping the onion into small pieces, then season with Greek seasoning, salt, and pepper
  • Cooking Directions
    • Cooking the Vegetables
      • Preheat the oven to 350 degrees
      • Spread the vegetables evenly onto a sheet pan
      • Cook the vegetables for about 15 minutes
    • Cooking the Orzo
      • Add 2 cups of water to a large pot and bring it to a boil
      • Add in ½ a cup of orzo
      • Cook the orzo for 7 to 10 minutes or until tender
      • After draining the water mix the orzo with Greek Salad Dressing
    • Cooking the Chicken
      • First add a splash of olive oil to the pan and turn on the stove eye to medium heat
      • Check the oil by flicking a few drops of water onto the pan
      • Once the water causes the oil to pop, add the chicken, and then cover with tin foil (helps reduce mess, and the oil getting everywhere)
      • Cook the chicken by continuously turning it over and getting a nice seer on both sides, or your preferred temperature
    • Cooking the Meatballs (very similar to the chicken)
      • First add a splash of olive oil to the pan and turn on the stove eye to medium heat
      • Check the oil by flicking a few drops of water onto the pan
      • Once the water causes the oil to pop, add the meatballs, and then cover with tin foil (helps reduce mess, and the oil getting everywhere)
      • Cook the meatballs by continuously turning them over and getting a nice seer on all sides, or your preferred temperature
    • Preparing the final meal
      • After mixing the orzo with the Greek seasoning add in the vegetables and the meat, then add more seasoning as you see fit
    • Optional add-ins
      • Add in the cherry tomatoes and baby spinach
